I’ve been on a serious revamp with the way that I eat, and I’m really making an effort to eat more wholesome, healthy and most importantly- home cooked meals. I think it’s probably because I’ve started a Sunday ritual of buying a ton of fruits and vegetables from a new market that I’ve found. And speaking about shopping, I prefer going to a market vs the grocery because I really want to buy more local produce and practicing eating what’s in season. I also found that I get SO much more produce at a much cheaper price than at the grocery, and the freshness of the things that I get, is SO noticeable. I dunno- once your go market you can never go back? #LOL

Because of this new inspiration of market hauls, I’ve been so inspired to create new meals and try new things. One of the things that really hit the spot was this easy AF herb and lemon cauliflower rice. OMGGGGG what even is normal rice (except in sushi tbh) but still!! I can’t get enough and now I might seriously might be hooked. And you’ll be too once you try this recipe and you HAVE too because it’s just the best thing you might taste made from cauliflower.

This takes about 15 minutes and it’s hella good. I also found an ancient food processor in the kitchen so that was so perfect for chopping up the cauliflower florets to give that rice-like finish.

Anyway, I used basil, thyme, kale and peppers from my garden and it’s honestly the best feeling when you #GROWYOUROWNFOOD
