With my new healthy lifestyle and all, there has got to be some obvious cravings- for instance, pizza. But how do you satisfy your cravings without the guilt or the carbs?
An easy solution is eggplant mozzarella pizza which just keeps me coming back for more. It’s so easy to make and you can get it done in like less than 30 minutes [P.S.- it’s way less time btw if you exclude the baking time].
For the tomato and mozzarella pizza, you will need:
– eggplant: try to get a relatively long one so that it will be able to hold more things
– mozzarella: you can sub another cheese if you like
– tomatoes
– onion
– black pepper
Cut the eggplant lengthways and then drizzle some olive oil into a grill pan. Lay the eggplant down on each side for about 7 minutes or until you start to see the eggplant softening. Flip it carefully since they would become delicate during the grilling process. Don’t you just love to see the grill lines?
When you think it’s softened enough transfer it to a baking sheet.
I put Hunt’s sauce on it followed by grated mozzarella cheese, tomatoes and strips of onion and of course a sprinkle of black pepper.
Bake in the oven at about 350 degrees for about 15-20 minutes- remember the eggplant is already partially cooked so it doesn’t need a very long time in the oven.
So, since I have my own beautifully growing peppermint plants, I find it adds so much flavor to my food.
It’s no wonder when my “pizza” was finished that I sprinkled some of this delicious herb on top of it and the result was ah-freaking-mazing.
You should note that the eggplant has water in it so while baking, it might exude some of that water but it would not affect the pizza in anyway.
Need I mention that mozzarella has moved up on my fave cheese ever? It’s so perfect and melty and that combined with the peppermint it’s like YOU HAVE TO TRY THIS.
Okay so the spinach and mozzarella pizza was very similar except you add spinach- obviously.
Now the spinach is a little tricky because you really don’t want to burn it at all. But, I baked my both pizzas for 15-20 minutes and the spinach came out perfectly.
So there you go, a really easy and delicious no “bad” carb pizza. I hope you try it because trust me, you won’t have any problem going back for the next slice.
