Long story short- I am crazy about being in the kitchen. There are days when I have the urge to just whip up something that’s not only healthy, but also fun and easy. These kale stuffed shells with goat cheese and other herbs really hit the spot. AND would you believe that I gave it to my boyfriend to try and he ate it all up? Why is this important you ask? Basically, I don’t cook with salt and he’s a huge advocate for salt in food. Also, he vowed that he hated kale and would never eat it. Also, he may believe that meat >>>> vegetarian everything. Well I showed him.
It also helped that he believed it was spinach until I eventually confessed. Technically I didn’t lie. I merely just nodded when he said he’ll eat it because “it’s spinach”. #EVILLAUGH

I am a huge fan of making meals in little to no time. It’s just way more fun and convenient right? Well in this meal, once you organize yourself, you can finish in 45 mins or less. For instance, the first thing you should do is preheat your oven and get your pasta boiling. Once that’s done, you can prep your stuffing so that by the time your shells are cooked, you can move right into stuffing them.
This is perf dish for instances where your kale has seen better days and yes, I’m pretty much talking about this very instance. Sautéing it with mushrooms, corn, garlic and onion makes for a delish and healthy base.
I also snuck in some dill and fresh basil from my garden and for the cheese, goat cheese adds such a tangy flavour but it’s balanced out with the cheddar. Feel free to replace this with any cheese of your choice but I find these two work perfectly together.
There really is no need for salt since the cheese already has salt and the herbs add incredible flavour.
The cheese melts and creates a rich, creamy stuffing.
I love using marinara sauce because it’s so much lighter than Alfredo for instance- but hey, whatever floats your boat.
Garnishing with fresh basil (julienned) makes for a perfect pairing since it adds a lively burst of flavour.
