I loveee baking for the holidays aka I love baking sugar cookies for the holidays. Honestly, I can’t bake anything else to save my life, and god forbid I even try to bake a cake. I never have patience for it to cool so I end up flipping it over and making it crumble to pieces #NOSHAME Basically, I’m soooo lazy when it comes to baking anything so I just HAD to share my lazy girl, one ingredient easy sugar cookie icing with you!

But sugar cookies, I get that ya know? And since the holidays are my fave time of year, there’s nothing that makes me happier than perfectly moist dough and sharp cookie cut outs. Icing on the other hand, is something I absolutely detest making and the only reason I even bother to ice the sugar cookies is because my guy asks. Since he only gets these during this season, I indulge him in a weekly batch of sugar cookies with icing– the last part a very specific request BTW.
With that being said, I don’t like getting my hands dirty (literally) by mixing Royal Icing with milk and whatever else it needs to get that perfect consistency for cookies. Mine in the past almost always ran shamefully all over the place- possibly in fright from me.
I tried many variations of icing until I settled on this bad boy. Yes you heard me- ONE ingredient. Drum roll please…
Marshmallows.
Yes, those fluffy big white ones. I kid you not. That’s all I use for my sugar cookie icing. Isn’t that easy AF? All you have to do is pop them into the microwave until they start to puff out. You want to do this in 20 second bursts so won’t burn them!! Then gently mix it until it reaches a yummy, gooey consistency and then slather it across your freshly baked (cooled) cookies.
Of course, for a festive punch, sprinkle them mercilessly with red and green holiday sprinkles. Or you whatever colour you’d like. I meannnn, no one said that red and green were the official holiday colours right?

Oh, you can even add a few drops of food coloring for different coloured icing but honestly, there’s nothing as perfect as white icing. I just wanted to show you how creative you can get with this.
One thing to note is that this icing is definitely not the type to decorate your cookies all fancy with like a million different intricate patterns. You’ll definitely have to go the Royal Icing route. Since this lazy girl icing has a consistency that’s more of a gooey liquid, it’s only good for covering the cookies in a perfect coating of icing. This is a great option is you’re like me and want something easy AF without barely any effort. Ya feel me? #LAZYGIRLPROBLEMS
