Oh the holidays are finally here again and it’s by far my favorite (clichéd) time of the year. I love seeing all the lights and big Christmas trees all around, the smell of sugar cookies baking in the oven, Netflix binge watching all the ph so perfect happily ever after holiday movies and ugh. How to Journal: tips, techniques & 10 journal prompts

I have been super into journaling recently because I have 1 million things always spinning in my head and that can get really overwhelming at most times. The reason why I gravitate to journaling is because I can be raw, open and honest with myself, and I can freely express myself in a non-judgmental way. It also gives me so much mental clarity and I love gaining a new perspective once I write down all of my thoughts, and really get into the real issue and not just a surface level feeling.

Easy Lemon & Herb Cauliflower Rice | Roxy James

I’ve been on a serious revamp with the way that I eat, and I’m really making an effort to eat more wholesome, healthy and most importantly- home cooked meals. I think it’s probably because I’ve started a Sunday ritual of buying a ton of fruits and vegetables from a new market that I’ve found. And speaking about shopping, I prefer going to a market vs the grocery because I really want to buy more local produce and practicing eating what’s in season. I also found that I get SO much more produce at a much cheaper price than at the grocery, and the freshness of the things that I get, is SO noticeable. I dunno- once your go market you can never go back? #LOL

Easy Chilli Flavored Baked Salmon | Roxy James

Since I’ve been back in the kitchen after my one year hiatus, one of the first things I made was salmon. And if you’ve been reading my blog for a bit, this won’t come as a surprise to you at all. I’m a vegetarian and I eat fish once or twice every month and salmon is definitely by far my fave fish to eat because it has a ton of health benefits. 

Besides eating wayyy too much salmon sashimi when I go for sushi, the other way I like my salmon is baked. Sure, it takes a much longer time to cook, but there’s nothing as good as a well baked salmon that flakes beautifully. 

Today I’m cooking with the Constance Estate Chilli Infused Coconut Oil which is made in Trinidad BUT they’re also available on Amazon YAY. I haven’t cooked with olive oil in ages since using the Infused Coconut Oils from Constance Estate: Chilli, Lemon & GARLIC. OMG the garlic infused is my ultimate fave (if you couldn’t tell already by the uppercase and bold. Don’t worry though, I’ll have more recipes using the different infused oils.

Pinterest Desk Organization & Desk Tour | Roxy James

How is it already MARCH? Where did the last 3 months go??? Does anyone else feel like 2018 is flying?? I know, sooo many questions to start the blog post but it was the first thing that popped into my mind. Any way, let’s get on to the good juicy desk stuff. 

I’ve always had a bright and colourful theme for my desk so expect bursts of pinks, blues and yellows. Vivid colours just brighten up a space and for me, it helped me to be motivated to want to be at my desk. I don’t mind switching things up a bit- and I actually might change the colour scheme soon, but the good thing is that it’s just a desk right? You can do anything you want and if you don’t like it, you can just switch it back to normal.
