I haven’t done a recipe in like foreverrrrr but since it’s the holidays and I have a few minutes to spare, why not try new things right? I opened the fridge one day and found two portobello mushrooms staring at me and instead of doing the usual chop and sauté, I decided to stuff them with some spinach and other goodies.
Seriously, it was soooo good and it only needed 6 ingredients. Say whatttt? Yea- you heard me. And it takes under 10 5 minutes to prepare and 25 minutes to bake. Interested? Keep reading and don’t get too hungry.
This is a dish you can easily make when you’re super busy and don’t have time to watch over a pot. To make your stuffing, you’ll need a food processor type machine and I used the NutriBullet– which I also use religiously to make my green smoothies.
It’s as easy as chop, spoon and bake.
Feel free to switch up the cheese! Parmesan, pepper jack and even good old cheddar are other great options.
