It’s been a little while since I posted a recipe for you but yesterday, I finally got inspired because I picked up some jalepeños at the grocery and it hit me that I never did anything with them before- except gobble the two that come with Papa John’s pizza [ does anyone do the same?].
Pico de Gallo [pronounced gahyo] is a fresh Mexican salsa which uses these fiery peppers for a flavorful oomph.
You can use this as a salad, on top of your tacos or even in your burrito bowl! Since it’s like a salad, it doesn’t have any liquid except of course for the natural juices of the ingredients.
All you need are 6 ingredients which your probably have at home [except for the jalepeños ofc unless Mexican is a thing for you].
Dice these up:
- 4 tomatoes
- 1/2 onions
- 1-2 cloves garlic
- 2 jalepeños
Finely cut:
- bunch cilantro
Squeeze:
- 1/2 lime [or use 3-4 tablespoons of lime juice]
* optional: you can add salt but you know my story with this already
Gently fold everything in and there you go- your super easy Mexican salsa!
