Let’s face it. We all have those ridic lazy days where we just don’t want to do anything with your lives. But yet, we’re craving something absolutely delicious. Something Italian, with fresh herbs and fragrant garlic, drizzled delicately with parmesan cheese…Okay I should really stop now because it’s 12:16 am and I am legit having a mouth-watering moment and I swear my belly just grumbled. Remind me to never do food posts this late!
One pot pasta is the. best. thing. ever. You legit put everything together in one big pot and it cooks itself. I kid you not.
Oh heaven help me. I could honestly bust out a pot and whip this up right fricken now.
One pot pasta is soooooooo easy to make you’ll scream. I like using fresh tomatoes, onions and garlic and canned mushrooms so it won’t be gloopy. You can add spinach to the mix but only when the water is reduced else the greens would be shriveled beyond the point of no return. Unless you like looking at ‘strings’ of spinach?
Also, I use whole wheat pasta since it’s much better than white pasta and I mean, this counts as a ‘cheat’ meal for me being so carb-heavy and all.
Add about 5 cups of water and sprinkle with black pepper and [optional] parsley flakes.
Make sure to give it nice frequent stirs- I liked every 5-10 minutes- so the pasta won’t stick together. The pasta exudes its own starches and that helps to thicken the water into a sauce while cooking everything else.
By the time it’s cooked down, you’ll have less than a 1/2 cup of water left- so no, you will definitely not end up with a soup.
Add some delish sauce and garnish with fresh basil leaves. Sprinkle parmesan cheese- or feta if that’s your thing.
This is absolutely perfect when you’re not in the mood to do any serious cooking and need I remind you of how freaking good it tastes?!
