I LOVE one pot everything because not only is it beyond easy to make, but it also tastes amazing AND you don’t have much dishes to wash. Can I get an Amen somewhere around here please and thanks.
Sometimes I have the craving for good, satisfying comfort food and nothing hits the spot quite like pasta. And since we’re being honest here, pasta is quite a carb heavy food so to me, it’s like a once-a-month treat for when I just want to wallow in glorious self pity. Of course, using whole wheat makes it sooo much lighter on my conscience and my tummy.
Here’s how to make this delicious one pot pasta in no time with barely any effort. Except of course, if you’re like me and want your pot to look ahhh-mazing. Maybe it’s the OCD in my soul?
The beauty of one pot pasta is that it’s self-saucing and the most you’ll have to do is stir frequently just to make sure everything is mixed properly.
WTH is “self-saucing” you ask? It’s simply that the water you put into the pot will start to thicken because of the starch from the pasta, and become a sauce-like consistency. It cooks all the ingredients and there’s no need for any straining.
Adding the basil all at once with everything else is up to you because it does obviously wilt once the pot starts bubbling. If you don’t like the overly wilted look, when the liquid starts to go down, you can add a fresh bunch of basil leaves to it. You can also try this with spinach.
Add 5 cups of water and set it to cook.
I know this is totally random but don’t the oil globules look so rad?
I added a fresh bunch of basil leaves once the “sauce” started to thicken. You can’t blame me and my basil overload because the Target $1 Spot basil I bought a few months back is now a welcome monstrosity in my herb garden.
After about 15-20 minutes and frequent stirring (cause you do NOT want anything sticking down to the pot), it’ll look something like this and as you can see, the water has considerably gone down. And yes, I had to show you in case you weren’t a believer in this one pot magic.
I love serving mine with a generous amount of parmesan cheese. What? Didn’t I say this was a treat for me? Gotta do the thing right.
Ingredients:
- box of pasta (whole wheat preferably)
- 5 cups of water
- 2 cups chopped tomatoes/cherry tomatoes/grape tomatoes
- 1/2 cup chopped red onions
- 6 cloves chopped garlic
- 2 handfuls of basil leaves (don’t chop because they’re going to wilt)
- drizzle of olive oil
- sprinkle of black pepper
- 1 tin mushrooms (DO NOT USE FRESH MUSHROOMS because they will turn into a slimy mess)
Notes:
- When cooking, I just eyeball everything so those measurements are basically just what I estimate my eyeballing to be *inserts eyeball emoji*
- Add other dried herbs and spices if you like such as red pepper flakes and parsley
- For god’s sake I don’t cook with salt (I’ll probably make that a disclaimer for all my food posts) but if you do, a sprinkle should be fine.
