Hello loves! How ya doing?
Recently I’ve been noticing a few comments here and there requesting a “What I Eat in a Day” video. I was a bit hesitant at first but then I thought why not? I already have a Fitspiration video playlist and since I’ve noticed a huge change in my appearance since I started this journey, I feel like I want to share as much as I can with you.
In this video I’m going to take you through a full day with me as I prepare my meals. Normally I would have leftovers from the day before but I just thought that showing you how I prepare everything would be more useful in a video like this.
Breakfast:
I love starting the day with a ton of fruits. I have been loving bananas like crazy and different kinds of melon. I found this pretty yellow watermelon at the grocery and it’s honestly one of the best I ever had.
Snack:
I drink V8 Vegetable Juice which I call my ‘cheat smoothie’. Unfortunately I have the original one but I strongly recommend the Low Sodium one which has a green cap. I also have a little addiction to Fig Newtons. Personally, I’m not a snacker because I’m not a fan of candy or other unfulfilling things, but this has some great benefits, especially compared to not-so-healthy alternatives. I limit myself to 3 for the most. Hey, it’s all about control right?
Keep in mind that my mid-moring snack would vary from day to day. This is simply what I had on this particular day.
Lunch:
Okay by the slew of recipes I have, you know salmon is basically a staple. I have so many recipes on how I do my salmon so if you’re interested, hit it up in the search bar. I don’t eat meat [I’m a pesco-ovo-lacto or something of that sort] so when I make salmon, it usually lasts me a couple of days.
Evening snack:
Since I’ve recently resolved to eat more local fruits, it’s not much of a surprise that I gravitate towards that for a snack. Since mangoes are in season, I buy a bag every week because they are by far my fave fruits in the world- especially if you chill them in the fridge. So. freaking. good.
Dinner:
I try not to eat anything too carb heavy so I usually eat a ton of vegetables and maybe some salmon if there is left over. However, for the sake of this video, I show you how I make a burrito bowl which is a one of my favourite dinner options. I use couscous instead of rice in mine and then I pack it with protein from the beans and other nutrients thanks to the veggies.
Dessert:
This is the time of true temptation. I try to get away with guilt free desserts that still satisfy my cravings. Sometimes, I spoon of peanut butter is all I need in life. But tonight, I made a yummy coconut cream parfait which takes less than 5 minutes to prepare.
